  • 1 beef heart, cleaned and trimmed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions:

  1. Prepare the Beef Heart:
    Trim any excess fat and connective tissue from the beef heart. Cut it into bite-sized pieces.
  2. Sear the Meat:
    In a large skillet, heat the olive oil over medium-high heat. Add the beef heart pieces and sear them for about 5 minutes until browned. Remove the meat and set aside.
  3. Sauté Vegetables:
    In the same skillet, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another minute.
  4. Combine and Simmer:
    Return the beef heart to the skillet. Pour in the beef broth and add thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 45 minutes, stirring occasionally.
  5. Serve:
    Once the beef heart is tender, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley.
