Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. Prepare Sweet Potatoes: If you haven’t already, boil or bake the sweet potato until tender. Allow to cool slightly, then mash until smooth.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, oil, eggs, and vanilla extract. Mix until well blended.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring just until combined. If using, fold in nuts and raisins or chocolate chips.
  6. Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
