To elevate the taste, we add Worcestershire sauce, Dijon mustard, and a blend of seasonings.

Originating in Kentucky, this dish is distinct from Germany’s Bierkäse, a cow’s milk cheese whose name translates to “beer cheese,” and also differs from Obatzda, a traditional German cheese spread made with pungent soft cheese, served cold with Bavarian pretzels.

Cheese Options

You can use almost any type of cheese for this recipe, but some will work better than others. We opted for a block of extra-sharp, store-brand cheddar because it’s a classic, affordable choice that packs a lot of flavor without being overpowering. Here are a few more tips to keep in mind when experimenting with different cheeses:

  • Ensure the cheese and beer complement each other and are flavors you personally enjoy, as both will significantly influence the sauce’s final taste, color, and texture.
  • For grating, choose a semi-firm cheese like Cheddar, Edam, or Gouda, or a semi-soft variety like Mozzarella, Jack, Fontina, or Muenster. These cheeses are easier to shred when chilled. Harder cheeses, or those labeled “aged” or “extra-sharp,” can be used too, but won’t melt as smoothly as softer, milder options.

The type of beer you choose for this recipe is entirely up to you—just pick one you enjoy drinking! We went with Pabst Blue Ribbon, a budget-friendly light beer with a mild, malty flavor that won’t overshadow the taste of sharp cheddar.

  • Light Beers: Ideal for beer cheese. They have a subtle flavor that won’t overwhelm easily melted cheeses like basic Cheddar. Fruity wheat beers, in particular, pair nicely with cheese.
  • Dark Beers: Stouts and porters work well too, but are best matched with bold, tangy cheeses that can hold their own against the beer’s deep, rich flavors.
  • Hoppy IPAs: If you’re a fan of these, feel free to use them! But keep in mind that if you’re not a fan of drinking IPAs, you might not enjoy the strong, bitter notes they add to the cheese sauce.

Be careful not to overheat your cheese dip. Excessive heat can cause the proteins and fats in the cheese to separate, resulting in a grainy, broken sauce. If this happens, it’s often hard—if not impossible—to fix. However, you may be able to salvage it by gradually adding a bit more cream cheese or Dijon mustard, both of which act as emulsifiers. Add them slowly, stirring thoroughly between each addition until the sauce comes back together.

Does Ranch Beer Cheese Dip Contain Alcohol ?

Boiling beer significantly lowers the alcohol content but doesn’t remove it completely. Rest assured, no one will get “drunk” from indulging in beer cheese! Ingredients
  

  • 1 cup beer
  • 1 Tbsp warm water
  • 1 Tbsp cornstarch
  • 2 oz. cream cheese
  • 2 cups sharp cheddar cheese shredded
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Heat the beer in a saucepan on medium-high heat. While the beer heating up, whisk together the cornstarch and warm water in a small bowl to make a slurry.
  • Once the beer comes to a rolling boil, let it continue to boil for about 5 minutes. Add the cornstarch slurry to the boiling beer, whisking constantly to fully incorporate it. Allow the beer to come back up to a boil, at which point the cornstarch slurry will slightly thicken the beer.
  • Turn the heat down to low. Cut the cream cheese into chunks, then whisk it into the beer until fully melted.
  • Add the shredded cheese a handful at a time, continuing to whisk until the cheese is fully melted before adding more.
  • Whisk in the Worcestershire sauce, Dijon mustard, salt, and pepper. Taste the cheese dip and adjust the salt or other seasonings to your liking.
  • Cover the cheese dip and keep the pot sitting over low heat so it stays warm and melted (or transfer it to a small chafing dish, crockpot, or electric fondue pot). Stir the cheese dip occasionally to prevent a thick skin from forming on the surface.
