- Celery
- Green onion
- Red onion
- Avocado oil mayo
- Plain greek yogurt

Making Buffalo Chicken Salad
- Chop celery, green onion, and red onion finely.
- Shred the rotisserie chicken. In a small bowl, mix avocado oil mayo, plain Greek yogurt, buffalo sauce, and seasonings.
- In a large bowl, combine the shredded chicken, celery, green onion, and red onion, then pour the dressing over.
- Mix well and enjoy.
How to store leftovers
For optimal storage, keep your leftovers in a sealed container in the fridge. I find these containers super handy!
If you’re looking to change things up, consider doing this instead
Opt for regular mayo in place of avocado oil mayo.

Ingredients
- 3 cups shredded rotisserie chicken
- 1/2 cup celery
- 3 tbsp green onion
- 1/2 cup red onion
- 1/2 cup avocado oil mayo
- 1/4 cup plain greek yogurt
- 1/4 cup buffalo sauce
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- dash of black pepper
Instructions
- Finely chop up celery, green onion and red onion.
- Shred rotisserie chicken.
- In a small bowl, add avocado oil mayo, plain greek yogurt, buffalo sauce and seasonings to mix together.
- In a large bowl, combine shredded chicken, celery, green onion, red onion and pour dressing on top.
- Mix together to combine.
