Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  2. Prepare the Jalapeños: Slice the tops off the jalapeños and remove the seeds and membranes using a small spoon or a corer. This step will help reduce the heat.
  3. Make the Filling: In a mixing bowl, combine the ground sausage, cream cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until fully combined.
  4. Stuff the Jalapeños: Using a small spoon or your hands, fill each jalapeño pepper with the sausage and cheese mixture. Pack it in firmly but avoid overstuffing.
  5. Coat with Breadcrumbs (Optional): If you desire extra crunch, roll the stuffed jalapeños in breadcrumbs to coat them lightly.
  6. Bake: Place the stuffed jalapeños on the prepared baking sheet. Spray the tops with cooking spray or drizzle lightly with oil. Bake in the preheated oven for 25-30 minutes, or until the sausage is cooked through and the tops are golden brown.
  7. Serve: Allow to cool slightly before serving. Enjoy your armadillo eggs with ranch dressing or your favorite dipping sauce.
