This succulent braised beef recipe is perfect for a comforting meal. Tender beef is slow-cooked in a rich broth, creating a flavorful dish that’s great for family dinners or special occasions.

Ingredients

  • 3 pounds beef chuck roast, trimmed and cut into large chunks
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (160°C).
  2. Sear the Beef: In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chunks with salt and pepper, then sear them in batches until browned on all sides. Remove and set aside.
  3. Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for another minute.
  4. Deglaze: Stir in the red wine (if using) and scrape the bottom of the pot to release any browned bits. Let it simmer for a few minutes until slightly reduced.
  5. Add Broth and Seasoning: Add the beef broth, tomato paste, thyme, and bay leaves. Return the seared beef to the pot. Bring to a simmer.
  6. Braise in Oven: Cover the pot and transfer it to the preheated oven. Braise for about 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork.
  7. Finish and Serve: Once done, remove the pot from the oven. Discard bay leaves. Adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
