Ingredients

  • 2 cups cooked rice (day-old works best)
  • 2 tablespoons olive oil (or vegetable oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt, to taste
  • Black pepper, to taste
  • Optional toppings: chopped green onions, sesame seeds, or a drizzle of soy sauce

  1. Prepare the Rice: If using freshly cooked rice, let it cool for at least 30 minutes. Day-old rice works best as it’s drier and will crisp up better.
  2. Heat the Oil: In a large non-stick skillet or frying pan, heat the olive oil over medium-high heat until shimmering.
  3. Add the Rice: Add the cooked rice to the pan, spreading it out evenly. Press down gently with a spatula to form a flat layer.
  4. Season: Sprinkle the garlic powder, onion powder, salt, and black pepper over the rice.
  5. Cook: Let the rice cook undisturbed for about 10-15 minutes, or until the bottom is golden brown and crispy.
  6. Flip and Crisp: Carefully flip the rice in sections to crisp up the other side. Cook for an additional 5-7 minutes until both sides are crispy.
